2 cups of strawberries, chopped
1 cup milk
1 cup heavy cream
3 egg yolks
5 tbs sugar
1 tbs vanilla extract
Combine milk, vanilla and cream in a saucepan and heat slowly, bringing to a simmer. Remove from heat.
In a separate bowl, whisk the eggs and the sugar until combined and foamy. Add a little of the warm milk mixture to the eggs and whisk to warm the eggs. Return this mixture to the saucepan with the remaining milk. Heat low and slow, continuing to whisk until mixture has thickened. Remove from heat and allow creme to come to room temperature.
Fill popsicle molds with blueberries. Strain liquid creme for milk and egg soilds. Fill molds with creme, pouring over fruit. Let freeze for 30 minutes and putt satrwberries into the each mold. Freeze another 30 minutes before insertign the popolsilce stcik and freeze at least 5 more hours. Dip bottom of popsicle mold in warm eater before unmolding. Serve immediately.
