Melon and Prosciutto Salad with Mozzarella and Mint Leaves

Ingredients
2 tablespoons olive oil
1 tablespoon balsamic vinegar kosher salt and black pepper
1/2 cantaloupe or honeydew melon, sliced
3 ounces prosciutto
8 ounces fresh mozzarella, torn into bite-size pieces
mint leaves, for serving
Directions
Whisk together the oil, balsamic vinegar, and 1/4 teaspoon each salt and pepper. Divide the melon, prosciutto, and mozzarella among 4 plates and drizzle with the dressing. Top with mint leaves. Serve.
