Greek Yogurt and Strawberry Popsicles

Greek Yogurt Fruit Popsicles

3 cups plain Greek yogurt
1 1/2 cups sugar (to taste)
1 cup lemon juice
1 tablespoon lemon zest
1/2 pint fresh strawberries, chopped (small)
Blend yogurt, 1 cup sugar, lemon juice, and lemon zest in a mixer until the sugar is dissolved. Refrigerate the mixture until thoroughly chilled, about 2 hours.
Put chopped strawberries and remaining 1/2 cup sugar in a small bowl, cover and refrigerate until use.
Put chilled yogurt mixture into an ice cream maker. When it has reaches the consistency of soft serve swirl in the starwberries and put into popsicle molds. Top with lids or tin foil and insert popsicle stick in the center. Freeze at least 6 hours.
These protein pops are great with any seasonal fruit, so beat the heat in season this year.
